GAJAR HALWA (CARROT PUDDING)
INGREDIENTS
1 1/4th kgs of red carrots peeled and grated, ½ cup milk, 2 cups of sugar, and 400grams of mava crumbled, 7 tablespoons of ghee, and 20 almonds blanched and sliced.
PREPARATION
1. Put carrots and milk into cooker.
2. Close cooker and bring to full pressure on high heat for 5min. remove cooker immediately from heat. Release pressure with slight lifting of vent weight. Open cooker.
3. Place cooker with carrots on high heat and add sugar. Cook till liquid dries up.(approx 15min), stirring occasionally. Add mava and ghee. Cook till ghee shows separately (approx 10min), stirring constantly. Serve garnished with almonds. This can served for about 12 guests.
