VEGETABLE CURRY (Bengali style)

INGREDIENTS

1 ¼ cups of water, 3 tablespoons of coriander powder, 2 tablespoons of cumin powder, 10 grams of ginger, 1 ¼ kgs of parwal (green potatoes)scrapped and cut into halves, 6 tablespoons of mustard oil, 4 medium(400 grams) of potatoes peeled and cut into 2 ½ cm pieces, 2 bay leaves, 1 ½ teaspoons turmeric powder, 3 ½ teaspoons red chili powder, 1 teaspoon Garam Masala powder, 3 ½ teaspoons salt, 1 tablespoon sugar, 1 tablespoon ghee.


PREPARATION

1. Gradually add ¼ cup of water to coriander and cumin powders, blending into a smooth paste.

2. Grind ginger into a paste.

3. Group parwal into 2 batches. Heat oil in cooker for about 5min. lightly fry each batch and remove. In the same oil lightly fry potatoes and remove.

4. To the remaining oil in the cooker, add bay leaves. Stir for a few seconds. Add coriander- cumin and ginger pastes, turmeric, chili and garam masala powders. Stir and fry for about 1min and parwal, potatoes, salt, sugar and remaining water (1 cup). Stir well.

5. Close cooker and bring to full pressure on high heat. Remove cooker immediately from heat and release pressure slight lifting of vent weight. Open cooker.

6. Pour ghee evenly over parwal curry and serve hot your favorite vegetable curry for about 12 people.
