KHICHURI (Soft Rice with Green and Vegetables)
INGREDIENTS
20 grams of ginger, 10 flakes of garlic, and 6 green cardamoms peeled, 2 sticks of cinnamon, 4 cloves, 8 cups + 1 teaspoon of water, 1 cup of split skinned green gram, half (1/2) cup of mustered oil, 4 bay leaves, 2 teaspoons cumin seeds, 1 large onion chopped, 1 cup of Basmati Rice washed, 300 grams of Cauliflower cut into floweret’s, 2 medium potatoes peeled and cut into
quarters, 1 cup of peas shelled or frozen, ½ teaspoon turmeric powder, 2 tablespoons coriander powder, 1 tablespoon red chili powder, 2 teaspoon sugar, 4 teaspoons salt, 2 tablespoons ghee.
PREPARATION
Grind together garlic and ginger into a paste.
Separately grind together cardamoms, cinnamon and cloves into paste adding a little water (1 teaspoon) from time to time.
In a pan, roast green gram on medium heat till golden brown (approximately 7 minutes), stirring constantly and remove and wash gram.
Heat oil in cooker for about 5 minutes and add bay leaves and cumin seeds. Stir for a few seconds. Add onion and fry till golden brown and add ginger-garlic paste. Stir for a few seconds. Add washed grams, rice and all other ingredients except water, ground spices and ghee. Mix well and add remaining water. (8Cups) Stir well now.
Close cooker and bring to full pressure on high heat. Reduce heat and cook for 4 minutes. Now remove cooker from heat and allow cooling naturally.
Now open cooker and stir in ground spices. Pour ghee evenly over Khichuri and serve hot delicious dish.
Your favorite dish is ready now and can be served for 10 people.
