MA KI DHAL
Ma ki dhal (whole black gram)
INGREDIENTS
6 ½ cups of water
1 1/4th cups of whole black gram cleaned and washed.
¼ cup of kidney beans soaked in water for about 1 hour and drained, 2 medium (200gms) tomatoes blanched and chopped.
5gms of ginger cut into thin strips, 6 flakes of garlic chopped.
Chopped 4 green chilies
2- Whole dry red chilies
Salt to taste
½ teaspoon red chili powder
1 tablespoon ghee
Tempering
2 tablespoons ghee
1 small (50 grams) onion chopped
5gmrs ginger chopped and,
½ teaspoon red chili powder
NOW LET US PREPARE DISH
Pour water into cooker. Bring to boil on high heat. Add black gram and all other ingredients except those for tempering. Stir once.
Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 50 min.
Remove cooker from heat. Allow to cool naturally.
Open cooker. Partially mash dhal with back of a ladle.
Place cooker with dhal on low heat. Simmer to obtain a creamy consistency (approx 7 min), stirring occasionally.
For tempering, heat ghee in a pan for about 1 min. and onion and fry till transparent. Add ginger and continue frying till onion is golden brown. Remove pan from heat. Add chili powder and pour evenly over dal. (Gram) Serve delicious hot dish. It acne be served for 10 guests.
