Tuvar Dhal (Red Gram – Gujarat style)
INGREDIENTS
7 Cups of water, 1 ½ cups of oily red gram washed, 1 teaspoon turmeric powder, 5 ½ teaspoons salt, 1 tablespoon of chili powder, 1 ½ teaspoons of coriander powder, 65 grams of crushed jaggery, 1 medium tomato chopped, 5 green silted chilies, 7 pieces of cocum washed, 2 tablespoons coriander leaves chopped
Tempering:
2 tablespoons vegetable oil, 1 teaspoons mustard seeds, ½ teaspoon cumin seeds, 2 whole dry red chilies, 1 spring curry leaves, and a large pinch of asafetida
PREPERATION
1. Pour 4 cups of water into cooker and add red gram, turmeric powder, and salt. Stir once.
2. Close cooker and bring to full pressure on high heat. Reduce heat and cook for 3 minutes.
3. Remove cooker from heat and allow cooling naturally.
4. Now open cooker and mash dhal well with back of ladle to blend with liquid.
5. Place cooker with dhal on high heat. Add remaining water (3Cups) and all other ingredients except those for tempering. Bring to boil. Reduce heat and cook for about 5 minutes, stirring occasionally.
6. For tempering, heat oil in a pan for about one minute. Add mustered and cumin seeds. When crackling, add red chilies, curry leaves and asafetida. Stir for a few seconds and pour over a dhal. Stir and serve hot tuvar dhal to your family.
