LIME RICE (South India)
INGREDIENTS
Take 5 cups of water, 4 cups of colam rice washed neatly, 1 teaspoon turmeric powder, ½ vegetable oil, 1 teaspoon mustard seeds, 1 tablespoon Bengal gram, 1 tablespoon split skinned black gram, 1 spring curry leaves, 16 green chilies chopped, 4 ¾ teaspoons salt, 1/3 cup+ 1 tablespoon lemon juice.
PREPARATIONS
1. Pour water in to cooker and bring to boil on high heat and add rice, turmeric powder and stir once
2. Close cooker and bring to full pressure on high heat. Reduce heat and cook for two (2) minutes.
3. Remove cooker from heat and allow cooling naturally.
4. Now open cooker and flick rice gently with fork to separate grains.
5. In a pan, heat oil for about 2 minutes and add mustard seeds. When crackling, add Bengal gram, black gram and fry till golden brown. Now add curry leaves and chilies and stir for a two seconds slowly. Now remove pan from heat and pour over rice.
6. Mix salt to taste with lemon juice and pour over rice and mix well.
7. Now serve hot tasty and fresh lemon rice to your family.
